Carotenoids & Health

Mission

The Carotenoids and Health Laboratory plans to address two research objectives that focus on the bioavailability, metabolism, and function of carotenoids, retinoids and other bioactive food components by applying various advanced laboratory technologies and collaborating with other experts in the studies below.

Lab Objectives

1. Determine the ability of bioactive plant-based foods, including carotenoid-rich foods, to exert biological functions and affect genomic stability

2. Determine the vitamin A requirement of healthy U.S. adults
