2650: Oat Research Study
Men and postmenopausal women age 50-70 years
The purpose of this study is to evaluate the absorption of oat phytochemicals (plant compounds) in oats. Participants will be asked to eat two muffins (one with oats, one without oats) and have blood, urine, and stool samples collected.
- Hormone replacement therapy
- Cholesterol or blood pressure-lowering medications
- Diabetes, kidney or heart disease, rheumatoid arthritis
- Alcohol consumption of 2 or more drinks per day

1 screening visit, 5 study visits
For 6 days volunteers will follow a diet that contains no oat phytochemicals. Examples of these foods include oatmeal, muesli, granola, cold cereals containing oats or oat flour, oatmeal cookies, bread, crackers, and other baked goods made with oats or oat flour. Instructions will be provided. Must stop dietary supplements one month before enrollment.
$25 for screening, and up to $640 for participants who qualify and complete the study.

The length of time volunteers are required to stay overnight at the HNRCA. Residents have their own private room, bathroom, television, VCR, and phone during their stay.
